Can we just talk about the condiments? If you order a 250-gram O’Connor scotch fillet – savoury, herbal, charred, juicy – out will come a glorious array of silver pots of mustard and jugs of bearnaise, as if you’re at Downton Abbey.
It’s these little things that give dining such a sense of occasion at Brent Savage and Nick Hildebrandt’s flagship restaurant in the city. It’s the big things, too – the magnificent interior of the former bank, the marble columns, the fathoms-deep wine cellar, the personable staff.
Savage is a whiz at reinventing tired-but-true dishes, transforming duck-liver parfait, ravioli, fish pie, Chateaubriand and chocolate cake into sophisticated, luxurious things of contemporary beauty. Hildebrandt runs a no-rules policy with wine pairings and drinks, and the grand piano is not just there for show (nor is the creaky trolley of locally made rums).
Best for: Winning friends and influencing people.
