Picpoul de Pinet comes from the Languedoc in southern France. In the summer, the bistros and restaurants in the nearby coastal town of Sète are filled with holidaymakers eating the local shellfish, washed down with a glass or two of Picpoul de Pinet. It is becoming increasingly popular here too.
Chianti is a well-known wine region in Tuscany in central Italy. This governo method is similar but different from appassimento. The producer referments a finished wine with some dried grapes mixed in. It sounds strange but it is a traditional way of making the wine smoother and richer, and it works.
