Moonlight

Japanese$$

Byron hibachi bar with stellar snacks and new-age wines.

The glow of the coals. The smell of the smoke. It’s hard to resist the gravitational pull of Moonlight, a hibachi restaurant and bar hidden in the backstreets of Byron Bay. A neon crescent at the entrance draws you into a bewitching black-walled space, where terrazzo tables and soft circular lighting channel the dark side of the moon.

The menu revolves around the hibachi grill, a steel trench of binchotan topped with mesh grates where co-owner and executive chef Robbie Oijvall turns skewers of miso-glazed salmon and green cabbage, dredging the blackened frills through curry ranch before dousing them in kombu oil. Away from the coals, the panko fish sandwich, crusts removed, is the post-beach snack of choice.

A sesame martini goes with everything, or try one of the biodynamic wines, picked according to the lunar cycle.

Good to know: Can’t get a table? The restaurant group (Arcade Agency) also owns The Smoking Camel next door.
