This venue is one of Good Food’s 100 Essential Sydney Cafes and Bakeries of 2026.

With how much Sydney’s dining scene is being reshaped by the next generation, it’s easy to forget the influence thelate Bill Granger had. But his export of “Aussie cafe attitude” and his take on brunch – fluffy ricotta pancakes, luscious scrambled eggs, the mightyavo on toast – still ricochets here and abroad, whether in the Darlinghurst original, Surry Hills, Tokyo or right here in Bondi.

While the daytime menu rightly grabs attention –bills is one of Good Food’s 100 Essential Sydney Cafes and Bakeries for 2026 – there’s lots to like about dinner. Service remains tight yet easy-going, and the food is as fresh and effortless as the setting. Even dishes like the zucchini chips are light thanks to the use of rice flour in the batter, while white-pepper fried chicken gets a lift with gem lettuce, shiso, coriander and a lively citrus and tamarind dressing. Bills’ king prawn and chilli linguine, and gentle yet fragrant yellow curry, is equally vibrant.

The Bondi bills is particularly appealing at night, when the lighting gives it a warm, inviting glow. Stick around and explore the easy drinking all-Australian wine list, with many available by the carafe (long live the carafe).

Good to know: Bills’ famous ricotta hotcakes with banana and honeycomb butter are also available at dinner.
