"Ise-ebi" (spiny lobster) from Aichi Prefecture is just one of the superb dishes at Saki.   | OWEN ZIEGLER

Walking into Saki, a Japanese kappō-style restaurant serving omakase (chef’s choice) on the 29th floor of the JW Marriott Tokyo, the mind wanders upon seeing the view.

Tokyo’s Rainbow Bridge, the glittering buildings of Odaiba and beyond, the shifting waves of Tokyo Bay beg the question: If this is the scenery, can the meal that follows live up to it?

First opened in October 2025 alongside the luxury hotel itself, Saki is the brainchild of two chefs: Emmanuel Stroobant, who runs the two-Michelin-starred contemporary French restaurant Saint Pierre, and Kazumine Nishida, who helms the two-Michelin-starred sushi restaurant Shoukouwa. Both establishments are in Singapore.
