Sidestepping hotel anonymity with polish and precision.

In this plush lobby dining space, all eyes track the bread and butter trolley as it makes its rounds, phones appearing as the tableside ritual unfolds. The 39servicefortwotofourpeopleisacallingcard–In this plush lobby dining space, all eyes track the bread and butter trolley as it makes its rounds, phones appearing as the tableside ritual unfolds.

The $39 service for two to four people is a calling card – a generous tableside spread of cultured butter, saltbush focaccia and accompaniments that balances theatre and substance. For an equally grand second act, there’s an opulent two-tiered, iced seafood platter ($120), or for something lower profile, delicately grilled ribbons of southern calamari speak to the kitchen’s light touch, lifted by Meyer lemon and a gentle undercurrent of wasabi.

A substantial Saddleback pork tomahawk comes faintly blushing and smoky, with sweet fat offset by the gentle bitterness of black walnut and radicchio. An exceptional list of Australian whiskies and a selection of local cheeses carry things through to the end. Confident, well-paced and quietly indulgent, this hotel restaurant rises well above the brief.

Good to know: Bar Tilda next door makes a strong case for lingering.
