This venue is included in Good Food’s 100 Essential Restaurants list.
An ironbark-fuelled grill overseen by former Rockpool Bar & Grill exec chef Corey Costelloe and his team lies at the heart of this backstreet restaurant, where precisely cooked steaks are the centrepiece.
An eye of chuck (one of several steaks, including a strong allocation of David Blackmore wagyu) is coaxed into peak flavour, and slicing through it with a kitchensharp steel knife is as rewarding as the texture on the palate. It’s joined by a jalapeno hot sauce that hums with cumin and acidity, and a sticky, sweet gochujang sauce.
Order a side of golden, well-seasoned chips and an ice-cold martini for maximum joy. Clever sides include a Rockpool-esque corn puree, while produce thoughtfully sourced from the Hawkesbury’s Stix Farm – such as slices of buttery ham alongside jammy cubes of pineapple – is another highlight.
Forget Americanisms or chophouse tropes, 20 Chapel is entirely its own: a very Sydney steak restaurant set in the suburbs.
Must-order: While the hot sauces are terrific accompaniments, the wagyu gravy is a rich broth with shreds of slow-cooked beef that’s prime for pouring all over your chips.
