Sydney’s model natural wine bar remains a leading light.
There’s a lot of IYKYK going on at 10 William. If you know, you won’t walk straight past the discreet doorway. You’ll study the blackboards of daily changing wines by the glass on the way in; and you’ll order the warm, crusty, seedy pretzel with whipped bottarga that has been on the menu since Dan Pepperell was chef in 2013.
Stay at street level for the lively bar-restaurant or head up the narrow stairs to a (very) dimly lit dining room – it’s the same short, sharp, ultra-seasonal menu deftly deployed by head chef Francesco Ruggiero.
Orecchiette is loaded with cime de rape as if Nonna wants you to eat your greens, and daily specials such as roasted quail with peppercorn sauce are plate-bait for a rich but soft Sottimano dolcetto from Piedmont. Flank your tiramisu with a coffee amaro from Japan. Japan does amaro? Yes, but of course you knew that.
Good to know: Tables downstairs can be more cramped than cosy so head upstairs if you want more space to stretch your legs.
